The Perfect Angle – A Truly Custom Edge

Western-style Japanese knives (Shun, Global, Tojiro, etc.) deserve precision sharpening tailored to their unique grind and steel quality. We fine-tune the angle—anywhere from 10 to 16 degrees—based on what your blade needs. After sharpening, we take it up a notch with extra-fine belts, then finish with a smooth leather belt polish for a razor-sharp edge that’s as sleek as it is sharp!

Strong, Sharp & Built to Last

German and other non-Japanese knives (Wüsthof, Victorinox, Cuisinart, etc.) are all about durability and power, and we sharpen them to match! We set the final edge between 17-20 degrees, depending on the knife’s quality and purpose. Using ceramic or structured abrasive belts, we create a polished yet slightly toothy edge for long-lasting sharpness. Finally, we clean things up with a hard felt wheel and compound, ensuring your blade is smooth, strong, and ready to chop, slice, and dice with ease!

Serrated knives

Sharp Teeth, Smoother Cuts

Serrated knives need a special touch, and we give them just that! We fine-tune the edge at 3-6 degrees on the flat side to keep those serration tips razor-sharp. Using fine ceramic or structured abrasive belts, we bring back the bite, then finish with ultra-fine Scotch-Brite belts for smaller serrations and smooth leather belts for those big, bold bread knife grooves. The result? A serrated edge that glides through crusty loaves, juicy steaks, and delicate tomatoes like a dream!

A great knife isn’t just about sharpness—it’s about balance. We consider thickness behind the edge to guarantee top performance, keeping most blades as thin as possible (with a few exceptions).

Before sending your knives back, we rigorously test them on our proprietary slicing paper—if they don’t glide effortlessly, they don’t leave our workshop.

Using grits from 120 to 2,500, we fine-tune every edge. For a mirror polish, we buff with jeweler’s rouge (15,000 grit) and finish with a leather belt for a slick, razor-sharp feel. It’s all about the perfect blend of sharpness, durability, and cutting power.
